Garlic

Garlic has been around in the world of medicine and in the kitchen forever. It is a great antiseptic, can help to cure a cold and other upper respiratory problems and can also be used to lower the blood pressure and prevent circulatory disturbances. Garlic can be used in several ways: whole, chopped or crushed. The more it is crushed the stronger the taste in the food. Garlic is one of the fundamental ingredients in the Italian kitchen as it is used in the "soffritto" (i.e. the mix of salt, pepper, herbs, onion etc. sautéed in olive oil), the base for e.g. risotto and many soups.
