Parsley

In antiquity parsley was used mostly in the tombs to honour the deceased but apparently also in the kitchen. In the Middle Ages the herb entered the kitchens everywhere, giving rise to the saying "Just like parsley" about somebody appearing everywhere. There are two varieties of parsley: curly leaf and flat leaf, the latter is the one most common in Italy. It is a fantastic herb as it can be used in numerous ways, as garnish, as flavouring or as a vegetable. Parsley is most tasteful when used fresh - frozen or dried it looses a big part of its fragrance.
